Morning
A barraquito — Tenerife's layered coffee with condensed milk, a drop of liqueur, lemon and cinnamon — with tortas chasneras, the sweet pastries named after Chasna, and a bocadillo de carne mechada, a roll with slow-cooked pulled pork.
A family table in Vilaflor de Chasna, on the road that climbs through the pine forest to Teide. Canarian food, cooked the way we eat it at home — every day of the year.

On the road to Teide
From the south coast, the roads wind up through Arona or Granadilla and meet in Vilaflor. From here the TF-21 climbs on through the Canarian pine forest into Teide National Park.
The family
It started in 1999 as a little café in Vilaflor. Over twenty-seven years it grew, plate by plate, into the restaurant it is today — still run by the same family, still open every single day of the year.
Morning
A barraquito — Tenerife's layered coffee with condensed milk, a drop of liqueur, lemon and cinnamon — with tortas chasneras, the sweet pastries named after Chasna, and a bocadillo de carne mechada, a roll with slow-cooked pulled pork.
Midday
Garbanzas, the Canarian chickpea stew; conejo, rabbit in a rich island-style sauce; and to finish, quesillo — the Canarian cousin of flan.
Evening
When the mountain air turns cool: escaldón — gofio, the toasted-grain flour of the islands, stirred into hot broth. Simple, warming, very Canarian.
The cyclists' stop
On the long climb from the coast to Teide, road cyclists pull in at Tito — it is their favourite stop on the way up. An espresso, a slice of cake, a bocadillo (filled roll) for the jersey pocket, and back on the bike.

Vilaflor de Chasna
At about 1,400 metres, Vilaflor is the highest village in the Canary Islands and one of the highest in Spain. The air is thinner, the nights are cooler, and the pines grow tall.
The village sits inside the pine forest. A short walk from the centre stands the Pino Gordo, the "fat pine" — a giant whose trunk measures around nine metres around.
Above the village, wind and water have carved pale cones out of volcanic ash — the "Lunar Landscape", reached on foot by an old trail from Vilaflor.
Pedro de San José Betancur was born here in 1626, became a missionary in Guatemala, and is the first saint of the Canary Islands.
Vilaflor's vines belong to the Abona wine region, with vineyards among the highest in Europe — volcanic soil, cold nights, small harvests.
Why "de Chasna"?
Chasna is the historic name of this part of southern Tenerife — a word of Guanche origin that some authors translate as "step" or "terrace", fitting for a land of stone-walled terraces. The name lives on in the village, and in a bottle on our wine list: Mencey de Chasna.
